The PIadina is the bread of the oldest tradition,
it has ancient origin and it tells the history of the people of Romagna

Ingredients:
500 gr of flour
150 gr of lard
Water and salt (sufficient)
Some bicarbonate

 
Join all the ingredient with some water until obtaining an enough hard paste. Subdivide the paste in some round loaf that once exteended with the mattarello (the pole in long wood) must form some piade of approximately 25-30 cm of diameter. The piadina must be cooked on a baking-pan in cast iron or better in terracotta, it must be cooked in a hurry. Weekly we propose a traditional dinner with with a large choice of typical food of Romagna.
